This complex, mellow mole features an earthy blend of sun-dried and roasted chiles, aromatic herbs and spices, creamy nuts, and sweet raisins, tomatoes and tomatillos. Accented with Oaxacan chocolate and slow-simmered for six days, the versatile sauce makes a delicious glaze for duck and other poultry.
